Ingredients:
- 2 cups cooked chicken breast, shredded
- 1/4 cup Greek yogurt
- 2 tablespoons light mayonnaise
- 1/4 cup celery, finely chopped
- 1/4 cup red onion, finely chopped
- 1/4 cup grapes, halved
- 1 tablespoon lemon juice
- 1 teaspoon Dijon mustard
- Salt and pepper, to taste
- 4 slices whole grain bread
- Lettuce leaves, for serving
- Tomato slices, for serving
Instructions:
In a bowl, combine shredded chicken, Greek yogurt, mayonnaise, celery, red onion, grapes, lemon juice, Dijon mustard, salt, and pepper
Mix well until everything is evenly incorporated
Toast the slices of whole grain bread
Place lettuce leaves on two slices of toasted bread
