Low Carb Egg and Bacon Quesadilla

A delicious low carb twist on a classic brunch or lunch favorite, these egg and bacon quesadillas are packed with flavor and protein.

Ingredients:

  • 4 large eggs
  • 4 slices of bacon, cooked and chopped
  • 1/2 cup shredded cheddar cheese
  • 2 low carb tortillas
  • 1 tablespoon butter or olive oil
  • Salt and pepper to taste

Instructions:

Add salt and pepper to a bowl and beat the eggs

Melt the butter or olive oil in a nonstick skillet over medium-low heat

Add half of the beaten eggs to the pan and swirl them around to make a thin layer

Once the eggs are set, take them out of the pan and set them aside

Do it again with the rest of the eggs

Put one tortilla in the pan and cover it with half of the cheese

Add one cooked egg sheet and half of the cooked bacon on top

To make the second tortilla, put it on top and quickly press it down

After two to three minutes, the bottom tortilla should be golden brown and crispy

Carefully turn the quesadilla over and cook for another two to three minutes on the other side

Take it out of the pan and let it cool down a bit before cutting it into wedges

Make the second quesadilla by repeating the steps with the rest of the ingredients

Enjoy while still warm
