Ingredients:
- 4 medium beets, roasted and peeled
- 2 ripe pears, thinly sliced
- 4 cups mixed greens
- 1/2 cup crumbled goat cheese
- 1/4 cup chopped walnuts
- 1/4 cup balsamic vinegar
- 2 tablespoons extra virgin olive oil
- 1 tablespoon honey
- Salt and pepper to taste
Instructions:
Preheat the oven to 400F 200C
Wrap each beet in aluminum foil and roast in the oven for about 45-60 minutes, or until tender when pierced with a fork
Remove the beets from the oven, let them cool, and then peel and slice them into thin rounds
In a small bowl, whisk together balsamic vinegar, olive oil, honey, salt, and pepper to make the dressing
Place the mixed greens in a large salad bowl and arrange the roasted beet rounds and pear slices on top
Sprinkle crumbled goat cheese and chopped walnuts over the salad
Drizzle the balsamic dressing over the salad just before serving
Toss the salad gently to combine all the ingredients
Serve immediately and enjoy
